Hey ! Thanks for stopping by , I try hard to eat healthy but I know it is really easy to slip up through our crazy weeks ! I do a food prep usually on Tuesdays which is my day off to prepare snacks and lunches and breakfasts for my self through out the week . That way when I need something quick it is ready to go. I also do a weekly menu which I posted below ! I eat way better this way and feel so much better ! I hope you can get some good ideas from my prep posts that will help you ladies !
Things that help me get through the week
2 Tupperware cut celery ( app.x 2 heads)
2 Tupperware cucumbers ( 2-3 cucumbers)
1 Tupperware sliced radishes with lemon and salt
1 Tupperware home made pesto
4 hard boiled eggs
2 containers pre-washed spinach mix and kale
berries
avocados
Spelt bread
hummus
almonds
pre bagged protein powder ( I mix with coconut milk and a banana and have these for most breakfasts)
home made protein bars/Luna bars

I usually have to cut up more vegges after about 4 days but I do not like to cut up to much in advanced since they don't stay very fresh . i am able to make salads really fast I just throw a boiled egg , spring mix cut up cucumbers, berries , almonds, pears etc and toss in some salad dressing and i am good to go
I LOVE this home made pesto dip . It is so easy and healthy . I topped it with sun dried tomatoes and feta cheese . I saw this dip at Costco but it was 12 dollars ! I bought it to taste it and have made my own ever since, I eat it with corn chips and it is a great snack ! yum !!

In my last healthy food post I talked about these organic protein/snack bars that I had gotten at the farmers market that were AMAZING the only ingredients were Dates , almonds, coconut, flakes coco powder, vanilla and salt ( or lemon Zest instead of coco ) I went ahead and tried my hand at making them today . they turned out even better then I expected ! They taste the same or better then the ones at the farmers market and a lot less expensive ! I love these cause they are an easy snack or hold over breakfast and they are so tasty and healthy !
