I love to cook and I love to eat healthy food . I really want to share some of my cooking tips and recipes I enjoy to you ladies , I know it is hard to keep up with eating good in this crazy life !But I find that planning ahead is such a HUGE help . Sorry this post is really late I was ganna do it Saturday ... but other things came up ! I hope you all love these yummy and healthy recipes.

Sunday - Stuffed butternut Squash
Ingredients
2 Butternut squash ( depending on your family size )
1 onion
1 red bell pepper
1 green bell pepper
1 Tablespoon tomato paste
1/4 bunch of cilantro
3 cloves minced garlic
1 pound turkey/chicken Chorizo
1 cup of wild rice cooked
2 teaspoon crushed red pepper
salt and pepper to taste
2cups chicken broth
Cooking Method
Boil two cups or chicken broth and add 1 cup wild rice , add salt pepper , crushed red pepper, and 1 glove minced garlic cover and cook for 45 min .
Cut the butternut squash in half lengthwise rub with olive oil , salt, and pepper. roast in the oven at 400 for an hour .
in a saute pan add onion and minced garlic and saute till the onion is tender but not opaque , add the bell pepper , tomato paste , Chili flakes salt,and pepper, and rough chopped cilantro . cook for a few minutes and then add Chorizo. Cook till Chorizo till fully cooked . about 7 min on medium heat .
When the squash in finished scoop out the centers to make a place for the filling . Combine the rice , Chorizo and the extra squash . Mix together . add mixture to the butternut squash sprinkle your choice of cheese on top and place in the over on broil for 2-4 minutes till melted . pull out and serve !
*I love this recipe . It is simple and healthy . It makes a lot I personally cut it in half for me and my husband and we can eat it for 2 nights .

1 tablespoon olive oil
1/2 pound hot chicken sausage
1 onion
1 carrot
1/2 cup celery
1 cup kale chopped ( optional)
1 tablespoon minced garlic
1 qt chicken broth
1 15 oz can of chopped tomatoes
1 can chickpeas ( optional)
fresh thyme (1 Tablespoon)
crushed red pepper
Cooking Method
Cook pasta according to the direction .to aldente ( a little under cooked) add all the veggies to a sauce pot along with olive oil . cook for 2 min then add sausage cook 10 minutes , ad chickpeas tomatoes and stock . Boil and simmer to 5-10 minutes . Add pasta, kale , and fresh thyme , crushed red pepper salt and pepper .
Serve with garlic bread if you want either way it is delicious and so great for this wintery.. weather (;

Saturday - Crock pot Chicken Verde
ingredients :
1 lb chicken thighs
1 lime
1/2 cup chicken stock
2 garlic cloves
1 tablespoon olive oil
2 lbs tomatillos
2 poblano chilies
1 onion
1 T corn starch
salt and pepper to taste
1/2 cup cilantro chopped
1 T fresh oregano or 1 t dried
cooking method
combine garlic , tamatillos , olive oil , chilies, toss everything in the olive oil and roast in the oven at 450 for 5-10 minutes , stir/check occasionally veggies should be blackened in some areas . Blend all the above ingredients in a blender , add chopped cilantro . Sear off the chicken thighs in a oiled sauteed pan , untill skin is browned. Place in a 8 Qt crock pot and cover with the salsa and cook on LOW for 4 hours / or un-till the chicken is done .
