I have to share this story because it made me laugh . So I am a pretty healthy person , however my sweet hubby is not very inclined to eating healthy . which is totally fine with me . I try very hard to make sure we have food in our house that he can enjoy and likes to eat; usually a variety of sandwich stuff , frozen, pizzas , hamburgers, hot dogs etc . In fact this morning for breakfast I made him a cake shake ( basically chocolate cake, mint ice cream and whole milk).... I love to make my husband smile and this is just one of those things that always puts a smile on his face .. what can I say I love him . Basically I do not think making your hubby eat a certain way is a very smart or effective decision , if anything it will just make him resent healthy food. So we happily eat different things most days except for dinner , When I cook dinner it is usually healthy but something that my hubby will also enjoy. Tonight I really wanted to make spring roles. I hesitated because I knew it was something that Paul probably would not love . He is such a good sport and eats Everything I make with a smile on his face. SO I figured i'd try it and see what happened .
I made 6 of these beauties , The filling was celery , peppers , shredded chicken, avocados, sprouts, Bibb lettuce, lemon juice , salt and pepper . I made a blackberry Citrus sauce to go with them or you could just eat them with regular soy sauce . Simple but really fresh and yummy .
I also made some spicy Quinoa with green onions and crispy kale . ( this is a dish that Paul has eaten a lot and likes so I figured i'd make it as a back up plan (; )
He ended up eating 3 of them but I could see him struggling to get them down ... I told him he didn't have to eat them and it most defiantly would not offend me. The last few bits I could tell , were really a challenge for him ... the rice paper you wrap them in is a bit of a funny texture if you are not used to it , if you are texture sensitive it could make you gag I suppose . I have never thought about it cause I've never had a problem with it. Luckily Paul was able to keep them down but I pretty much felt like a horrible wife making this poor man eat these spring rolls. This was honestly the first time I felt like Paul really did not like what I had cooked ... not the best feeling . So I guess I won't be making that mistake again !!
Over all I really enjoyed both of these dishes and would make them for myself again for an easy lunch or something like that . If you have wanted to try spring rolls I would say give it a shot , they really are a great light and healthy snack or meal idea that has so many varieties ! Good luck !
